The 'Modern Family' star, who started dating the 37-year-old actor in July, admits she initially didn't want to go out with him because she thought he was "too much."
The 42-year-old beauty said: "I had just seen him very far away at events. I thought he was very handsome, but I wasn't interested. Too handsome."
When asked if it's really possible to be "too handsome," the Colombian star told 'The Ellen DeGeneres Show': "Yeah, there is such a thing as too much. Or so I thought..."
While the actress wasn't instantly smitten with the 'Magic Mike' star, Joe previously admitted he always had a huge crush on her.
Speaking about his ideal woman earlier this year, he said: "Sofia Vergara, that's it. She's got that Latin thing going. She's got the butt, she's got curves, she's got a beautiful face, beautiful hair, just gorgeous and she's feisty."
The couple are planning to celebrate Thanksgiving with his extended family later this month.

The 'What's Left Of Me' hitmaker, who split from the blonde beauty in 2005 after three years of marriage, is glad he waited to start a family with his pregnant wife, Vanessa Lachey, with whom he already has two-year-old son Camden.
Asked how happy he is that they never had a baby together, the 41-year-old singer said: "In our situation, that was probably the best thing that could have ever happened that we didn't have kids.
"And look, you're always going to love your kids no matter how you feel about their other parent, but all things being equal, it was the best thing probably for both of us that we went on with our lives."
While Nick and Vanessa are preparing to welcome a baby girl next month, Jessica has daughter Maxwell, two, and 15-month-old son Axel with her second husband, Eric Johnson.

The 'Glee' star, who married his longterm girlfriend in front of just 50 close friends and family members in Hawaii last month, thinks their bond is "going to grow and grow" for the rest of their lives.
The 35-year-old actor said: "There's this connection that I knew we had before, but it's just deepened. It's just going to grow and grow."
Asked how he knew Renee was "the one" for him, he told PEOPLE.com: "She kept kind of proving things. The 'Keeping Up with the Kardashians' star, who is set to give birth to another baby girl next month, was joined by a small number of friends and family members, including sister Kim Kardashian West, for an intimate 'Breakfast at Tiffany's'-themed brunch at the Montage Hotel & Resorts in Beverly Hills.
The 35-year-old reality TV star, who already has son Mason, four, and daughter Penelope, two, with her longterm boyfriend Scott Disick, shared a photograph of herself with Kim, 34, and their other sister Khloé Kardashian, 30, and half-sister Kylie Jenner, 17, on Instagram from the gathering, with the caption: "Baby shower brunch! #breakfastAtTiffanys (sic)"
All of the guests were dressed in either black or white for the event, but it seems it was still a child-friendly affair, as Kourtney's niece, North West, was also spotted arriving at the hotel with Kim.
The pregnant beauty received a large number of gifts wrapped in Tiffany blue paper and white ribbons, which were stacked up on tables decorated with an array of white flowers, including tulips and roses.
Other guests at the party included make-up artist Joyce Bonelli and the Kardashians' close friends Malika and Khadijah Haqq, but their 19-year-old sister Kendall Jenner was unable to attend the festivities.
Khloé wrote on Twitter: "Off to my sisters baby shower!!!!
"We miss you our little croissant Kendall Jenner"
The model, who is currently in New York City, responded: "that's me! the croissant...miss my sisters"

The 28-year-old actor, who is dating 'Two Weeks' hitmaker FKA twigs, is reportedly the secret buyer behind a blind trust purchase of a two-bedroom property in the Hollywood Hills.
The 1,940-square feet bungalow is situated behind another property down a long, gated red brick driveway, and has two bathrooms, according to Variety.com.
It also boasts a spacious living room with multiple French doors that open to a private, tree-shaded yard with a swimming pool, modern kitchen with high-end stainless steel appliances and courtyard areas around the side and rear of the residence.
The British star sold his mansion in Los Feliz in January for $6.375 million to 'The Big Bang Theory' star Jim Parsons after buying it in September 2011.
His new investment might come as a surprise to fans, as the 'Maps to the Stars' actor recently was thinking about moving back to London.
He said: "I think I might be done with Los Angeles. I've just realised that in the past few weeks. If you are the kind of person who needs to be pushed into doing something, then Hollywood is not the right place.

The 'Wolf of Wall Street' star celebrated the milestone with some of his closest friends, including Maroon 5 frontman Adam Levine and 'Blurred Lines' hitmaker Robin Thicke, at the SoHo House in West Hollywood.
A source said the heartthrob, who is rumoured to have split from German model Toni Garn, 22, in September after almost 18-months of dating, was also joined by Def Jam co-founder Russell Simmons and actor Tyrese at the bash.
But the insider told gossip website TMZ.com the guest list consisted of "80 percent models."
Tyrese posted a photo on Instagram of himself with Russell and the birthday boy, with the caption: "Cool as selfie - happy 40th #MyBroLeo (sic)."
