Valentine Warner creates Earth Hour menu


Valentine Warner, Ken Hom, Raymond Blanc, Rachel de Thample and Ching He Huang have created special menus in support of Earth Hour.

The celebrity chefs are backing the World Wildlife Fund (WWF)’s annual global initiative – which asks people to show they care about the planet by switching off their lights for one hour – and have created meal plans of sustainable foods that are good for the planet

Valentine said: "We increasingly fail at understanding that we cannot be here without nature. Mother Nature needs some helpers."

He has crafted a menu of Mussels and Leeks on Toast, Green Risotto and Poached Pears in Chocolate Sauce, while Ken’s comprises stir fried fish with peas and stir fried cucumber and hot spices.

Rachel’s tasty fare includes Cauliflower couscous with coriander and orange, warming Tunisian stew with smoked fish and saffron with strawberries or rhubarb, and Raymond’s offering is pistou soup, confit duck & flageolet beans and baked apples & semolina souffle.

Ching’s menu boasts smoked tofu with kale, spicy sichuan cucumber salad, stir fried carrots and french beans.

Earth Hour – which saw 162 countries take part last year – takes place between 8.30 and 9.30pm local time on 28 March.

Samoa will be the first country to switch off, and Tahiti the last.
