The 56-year-old star has been inspired by the "miracle" success of ‘The X Factor’ to revive the panned cooking show he created in 2013 that featured host Carol Vorderman searching across the country for the best home cooked meal.
Asked would he bring back the series – which he hoped would rival the BBC’s ‘Great British Bake Off’ but was axed after just one season – he said: "I would, in a heartbeat. It’s so quirky. Trying to re-create that would be hard but I wouldn’t have thought when I started ‘X Factor’ we’d still be here. It’s a miracle."
Juggling his numerous business ventures shouldn’t be too much of a challenge for Simon in the future as he’s revealed he’s already training up his two-year-old son Eric to take over part of his empire.
Speaking about showing the little boy the ropes at his record label Syco, he said previously: "He’s doing amazing! He’s like two and a half years old. He loves music, loves dancing. He’s going to follow me into what I do. I know that.
"I’m training him up now. He’s going to work for my record label."
And the ‘America’s Got Talent’ judge admitted Eric has already become a "good critic" and has been watching numerous auditions to get him into practice for his future career.
Simon added: "He’s brilliant, he comes down to the auditions and really enjoys the acts. He’s very good to watch, funnily enough, because I can see when he’s bored and when he’s up dancing. He’s a good critic already. He’s unpaid, but he’s helping me!"
